Don't forget the 25% rule of thumb: don't prune more than 25% from any branch or from the entire plant at one time.
In order to properly prune so that you don't remove flowers you must know which hydrangea you have -
the kind that blooms on the previous season's growth (often referred to as old wood)
or one that blooms on the current season's growth (new wood).
Below is a list of commonly planted hydrangeas with the type of wood that the flower blooms form on and the best time for pruning

Species Bloom Wood Prune Time
H. arborescens
Smooth hydrangea
Current Season Winter/early spring
H. macrophylla
Bigleaf hydrangea

Previous Season Immediately after flowering
H. paniculata
Panicle Hydrangea
Current Season Winter/early spring
H. quercifolia
Oakleaf hydrangea
Previous Season Immediately after flowering
